Microwave tips
Pronto Pita Pizza
4 pita breads [6-inch diameter]
2 cups canned pizza or pasta sauce
1/4 cup fresh herbs, chopped OR
1/2 Tbsp. dried basil or oregano leaves
2 cups [8 oz.] mozzarella cheese, shredded
2 Tbsp. parmesan cheese, grated
Baking sheet or cookie tin
Garlic-flavored nonstick cooking spray
Choice of toppings:
8 Tbsp. ripe black olives, chopped
2 cups mushrooms, sliced
1 cup roma tomatoes, chopped
Pre-cooked pepperoni or sausage
2 cups grilled chicken, chopped
2 small red onion, thinly sliced
1 cup chopped red pepper

  1. Split pita bread around edge with knife to make 2 rounds. [For thick crust use one whole pita and place ingredients on top, or slice 3/4 open, and add toppings inside.]
  2. Spray the "bottom" of the pita with garlic-flavored nonfat cooking spray and place on baking sheet. [Pita rounds normally have one side that curls upward; designate that side as the "top" so it holds the sauce and toppings securely.]
  3. Spread pizza sauce on pita top [or inside full pita].
  4. Add choice of toppings. Lay on tomatoes first, then meat, followed by mushrooms, onions, and olives.
  5. Sprinkle with cheese.
  6. Dust with basil or oregano.
  7. Bake on cookie sheet or baking pan at 350º until cheese is hot and bubbly, about 10 minutes.
